patriotic parfait

I have been debating what patriotic pastry to make for the 4th of July.  Although I was really tempted to make this amazing flag cake from “17 and baking”, I opted for an easier (and healthier) red-white-and-blue parfait.  Al was quite a fan, but Lucy didn’t take much liking to it.  I’m always looking for holiday-specific recipes, so if you have any, send them my way.
